ROAST AND SHIPMENT
All Orders placed before every Tuesday at Noon will be roasted on Wednesdays and rested for breath for two days before dispatch.
ABOUT THE TERROIR
Coffee trees on Finca La Argentina are intercropped with other subsistence crops such as plantain, pitaya (dragonfruit), peach, orange, tangerine, lime, guava and sugarcane.
The Ramirezes selectively handpick cherry. Cherry is pulped on a classic pulper and fermented to 10 to 20 hours, depending on ambient temperature. After fermentation, they wash parchment in clean water and lay it to sundry. Parchment takes an average of 7 to 15 days to dry. Throughout drying, parchment is turned regularly to promote even drying and carefully inspected to remove any damaged beans.
